Ingredients:
- 2 tablespoon sugar
- 2 tablespoons fresh lime juice
- 1 teaspoon finely grated ginger
- 1 tablespoon fish sauce
- 1 minced garlic clove
- 1lb Pampano, filleted with skin on
- salt
- pepper
- 1 tablespoon cilantro for garnish
Directions:
Turn the grill ON.
Spray the grill with the olive oil spray.
In a small bowl, combine sugar, lime juice, fish sauce, minced garlic and grated ginger. Mix the ingredients together until sugar liquifies. Set aside.
Fillet the whole Pampano if the store hasn’t done it for you. leave the skin on. Click here on how to fillet the pompano.
Wash and dry the fillets. Cut the skin to prevent from fillets curling. Generously season the fillets with salt and pepper.
Place the filets on the hot grill and grill for 3 min per side.
Remove the fillets from the grill and transfer onto the plate. drizzle the sauce onto the fish and sprinkle chopped parsley on top. This dish goes well together with the roasted acorn squash. Click here for the Recipe. Enjoy!
